Winemaking

The grapes were picked by hand, sorted in the field. At the winery the grapes were hand sorted, destemmed, and fermented in barrel. After fermentation, the wine was pressed and aged in stainless steel for 33/21 months on fine lees. The 2018 and 2019 vintages were racked and blended in tank before bottling July 12, 2021.
